Another great opportunity to make a difference. Can you or someone you know well cook? (Would they enjoy it?) If you are hiring a venue that doesn't provide catering do you really need to hire someone? Think simple - what do you love - Lancashire hot pot? Paella? Cream teas? What about elegant cucumber sandwiches and Pimm's? Obviously what you do depends on the number of guests you have - but however you choose to cater, don't be put off by tradition.

If you are putting on your own banquet or leaving food and drink to the experts in your chosen venue, ask them if they can source locally and organically where possible. Choosing locally grown, seasonal produce will have a significant, positive impact upon the local economy.

And don't forget, if you have table menus (on recycled paper of course!), to mention that your food is local and organic. Who knows, you might inspire others to try their own local farmers' market, or even just to think about how they shop and the impact it has.

What about wine?

Is there a local grower you can support? Ok it may be cheaper in monetary terms to buzz across to France and buy your own wine; but how much is this trip costing the planet? And will two days out of your precious schedule (and all those traffic fumes) really aid your beauty sleep? Take the hassle out of your own hands and liaise with a local supplier; or ask the hotel to do it on your behalf. What about a local cider mill? Oh and make sure you recycle all that glass! If the venue do not recycle it's about time somebody asked them why.
